Everybody eats. Yet how do we make healthy choices with ever expanding options? How closely are our food selections interwoven with our dietary patterns, our health, and our environment? Why are more people starving in a world while the rate of those overweight and obese continues to rise? Is there a way to make sense of world food issues concerning sustainability and food economics?

In this course students are introduced to controversies surrounding food and health in contemporary society, and explore elements related to food choices and how these choices affect health, sustainability, and the environment. Students will learn about cultural and ethnic food patterns, have an opportunity to prepare ethnic cuisine, and explore a variety of food markets. Popular food related film and text media will be reviewed and discussed. WC
